Instructions
  1. Pierce the entire surface of the steak with a meat fork. Place in a flat glass dish. Whisk together olive oil, ale, shallots, garlic, thyme, and pepper until blended. Pour over steak, turning to coat. Cover with plastic wrap. Refrigerate overnight. One hour before grilling, remove steak from marinade and drain well in a colander. Let meat come to room temperature. Discard marinade. Sear steak over hot coals for about 3 minutes on each side. (Time depends on the grill temperature.) Remove steak to a cutting board. With a sharp knife held at a slight angle, cut steak into very thin diagonal slices about 1/8-inch thick.
