Add chicken broth and saffron to a pot and bring to a boil. Cover and set aside.
In a large skillet over medium-high heat, heat olive oil. Add sausage or chorizo and chicken. Allow to cook for 5 minutes, stirring frequently. If using chorizo, break up as it cooks. Add shrimp and cook until it turns red in color.
Add red pepper, green pepper, green onions, garlic and paprika. Saute for 1 minute.
Add tomatoes and peas, cover and allow to cook for additional 5 minutes.
Remove skillet from heat and keep it covered.
Cook orzo according to packaging. Drain.
Combine orzo, chicken broth and contents of skillet. Season as desired and serve.
