Chili
Ingredients
- 3 Tbsp olive oil
- 2 lb ground beef
- kosher salt
- ground pepper
- 1 medium onion, diced
- 1 small green pepper, diced
- 2 garlic cloves, minced
- 1/3 cup chili powder
- 2 tsp dried oregano
- 1 1/2 tsp ground cumin
- 3 15 oz cans kidney beans, drained and rinsed
- 28 oz diced tomatoes
- 15 oz tomato sauce
- 10 oz corn
- grated cheddar cheese
- sour cream
Servings: people
Instructions
- Heat 2 Tbsp. oil in a large pot over medium heat. Brown beef, drain and season with a pinch of salt and pepper. Remove from pot.
- Heat 1 Tbsp. oil in pot, Saute onion, pepper and garlic for approximately 5 minutes. Stir in chili powder, oregano and cumin. Cook for additional 2 minutes.
- Return beef to pot. Stir in beans, tomato, sauce, corn and 1 1/2 cups of water. Simmer 30-50 minutes.
- Serve with a dollop of sour cream and a sprinkling of cheese,
