CourseDessert, Snack Ingredients Lemon Loaf 3 eggs 1 cup sugar 1 cup Greek yogurt 1/2 cup oil of your choice 2 Tbsp lemon zest 2 lemon rind 1 1/2 cup flour 2 tsp baking powder salt to taste Glaze 1 cup powdered sugar 3-4 Tbsp lemon juice Servings: Instructions Preheat oven to 350 degrees. Grease and flour 9 x 5 loaf pan. Set aside. Combine eggs, sugar and yogurt in a large bowl. Add oil and continue to mix. Add lemon zest and rind. Continue to mix. Slowly add dry ingredients (flour, baking powder and salt). Continue to gently stir. Evenly pour batter in loaf pan. Bake for 40-45 minutes. Loosely cover pan with foil and return to oven for additional 10 minutes. Place entire pan on cooling rack and let set for a minimum of 60 minutes. Once loaf is cooled, slowly add lemon juice to small bowl of powdered sugar. Whisk until smooth and the consistency you prefer. Drizzle glaze over loaf and serve.
