Quinoa & Black Bean Salad
Ingredients
- 1 c uncooked quinoa
- 1/2 tsp salt
- 2 c water
- 1/3 c red onion, diced
- 2 Tbsp lime juice
- 1 tsp ground cumin
- 1/2 red bell pepper, diced
- 15oz canned black beans
- 1 c corn
- 3 medium tomatoes, cut into chunks
- 6 oz mozzarella, cubed
- 1/4 c cilantro, chopped
- 4 Tbsp olive oil

Instructions
- Rinse quinoa thoroughly. Place in water in a pot and boil. Cover and allow to simmer gently for 10-15 minutes. Once the water is fully absorbed, set aside for 5-7 minutes.
- Meanwhile, soak red onions in lime juice. Drain and rinse black beans.
- Combine cumin, pepper, black beans, corn, tomatoes, cheese, cilantro and oil.
- Mix quinoa, onion, lime juice and black bean mixture. Cool completely and serve.
